Diapiro means a salt and mineral concavity located inside of one of our main mountain called Cabeso. Inside the mountain are located hundred of concavities rich in salt and minerals. The label shows an old salt mine with workers (people of the village) extracting and working the process of the salt by hand 80 years ago.

Tasting Notes
Dark cherry base with a deep red finish. Intense and complex aromas. Ripe fruit with a hint of fresh red fruit, finely balanced with the wood smell. Subtle aromatic herbs, fennel, and eucalyptus. Elegant aromas of chocolate and toasting. Full-bodied and pleasant to the taste. Fine silky tannins. An aftertaste of creamy toasts, ripe fruit, and balsamic tones. A sensation of fullness and freshness. Food pairing: grilled red meats, roast beef or Carpaccio, light hotpots, lambs, semi-soft cheese, fish such as tuna, salmon or cod, rice with meat and vegetables. Desserts such as quince jelly with cheese or chocolate fondant. Serving temperature 15º-18ºC
